Citrus-Dijon Salmon En Papier Style

And it is speedy – 5 min of prep and 20 in the oven and you are done. Usually, I will do the veg in with the fish, but since I was going to the gym, I thought that it would save some time to slow roast my veg separate on the side and stick it in while I was at the gym. This is super to do for a dinner party since you can cook everything in individual packets and just plate it by slicing the foil down the center to serve. It is also pretty failproof, it is hard to overcook it in the oven and it does not stink up the house like pan-frying the salmon does.
For this, I just did the salmon in some pepper, dijon, thyme, and clementine slices. I roasted the potatoes on the side and some cauliflower and added some dijon to both halfway through cooking.


Roasted Cauliflower Frittata

I made some changes by lightening it a bit and adding some more veg, but this was for no other reason other than preference and not wanting to bust open a single serve yogurt for this. Hers looks amazing as is!
I roasted my cauliflower the other day so this was pretty speedy.


Fusilli with Broccoli Rabe, Roasted Tomatoes and Basil-Mint Pesto

It is a riff on this, but I wanted more veg and color, so added the broccoli rabe and tomatoes, both which I roasted because I seem to be obsessed with roasting stuff.
I made the pesto yesterday, but this is just as speedy to make it all at once while the veg are roasting.

I made a few changes, but this is pretty easy and leaves me with some leftover to make fajitas later this week. Strike that, I am just eating the sandwiches all week. They are really that good. Baked Sweet Potatoes with Chickpeas, Tomatoes, and Spinach

But I had wanted to go to the gym earlier – my shows were on! He redeemed today by starting this while I worked late today.
I saw a recipe on thekitchn.com for a coconut curried chickpeas over sweet potatoes (theirs is linked at the end of post). That did not appeal totally. So this is what I came up with, it is sorta Moroccan-Mediteranean in flavor profile, like southern Spain in the cold mountains or something like that. And while I don’t normally post calories, this whole ginormous plate clocks in at 670. So healthy, low cal, check and check. Oh and it is super speedy, other than baking the potatoes. Super tasty too.

Super Healthy Vegetable Two Bean Chili

Healthy? Blah. But this is good. And Healthy. And Easy. And perfect if you are the type to do a food cleanse, but still like to eat. I don`t do food cleanses anymore, but healthy eating is always a good thing. This is definitely healthy and is pretty unprocessed. This comes together pretty quick, and you can either do a slow cook, or get it done in about a half an hour. This was done slow.

Stuffed Portobello Mushrooms

And tonight I am making Stuffed mushrooms and roasted brussel sprouts. I skipped the balsamic that was in my plan, but used the zucchini and onions I cut the other day. Also got rid of some feta that was hanging out.
ZOMG! This is such a plating/ picture fail and it is soooooo effing good. Sad. This is going on rotation. Don’t skip the Sundried tomatoes. Srsly!

Caramelized Onion, Spinach and Potato Spanish Tortilla

My first attempt was a fail. It tasted good, but I had never caramelized onions before and did not realize how much they would shrink. The original recipe is all caramelized onion bound by a bit of egg. I only used 2 onions. Ok, so it was more of a tortilla with caramelized onions instead of a caramelized onion tortilla. It was still good and it was my first time at the caramelized onion rodeo, and luckily I had done a test run fail prior to making it right for my big recreation of Madrid tapas at a subsequent dinner party I had planned. To get this right, you need at least 1 1-1/2 onion per egg. At least.
Fast forward 2 years and caramelized onions are a sorta pantry staple. You can make a whole mess of them when you have a couple hours and freeze them. Use them in this, make a fast soup, pizza, a tart – wherever – they are that good.
This tortilla is not a recreate, it is a riff. I decided to add a bit more veg – spinach and potato – and some cheese. I also did not flip it nor did I mix it all together like a traditional tortilla, for the Juana la Loca version, I did mix all together. Anyhoo. Feel free to leave the cheese out if you want it dairy free.


Polenta with Tomatoes and Artichokes and Some Random

Lots of catch up. Worse, I am getting a cold again. For realz this time. But I have a 9-6 event tomorrow so no time for that. The problem with vacations, for me at least, is that I am so used to not eating prepared foods at this point that my immune system goes haywire from the germs or something and I get a cold. That and vacation from work just means more work to catch up to.
I still have some Barcelona posts to catch up on too but here are some things I made this week and I have an On Deck ready for tomorrow. But crap, I will be out of the office all day tomorrow so it may not get posted til Saturday. And I have not gotten to the gym this week. Saturday. *sigh*
Speedy All In One Fresh Pasta

But I still managed to do it. The husband grabbed some fresh dumplings from North but I was so late I decided to hold them for lunch tomorrow and make this. it took all of 15 min and I have some pesto made for a crap-ton of meals later.
Fresh pasta from the CSA, cherry tomatoes, some remnants of cambezola and boucheron, made a spinach pesto and salad. All in one.
