Pizza Party Part 2: Standard Pizza

Before I get to my heirloom tomato experiment, we have to have Standard Pizza. Standard Pizza is sauce, olives, onions, mushrooms, fresh mozzerella and sausage half for the husband.

What I used:

Tomato Sauce, I had already made this and had in the fridge.

Kalamata Olives

Fresh Mozerella

Onion

Crimini Mushrooms,, 8oz and yes, I did buy the presliced, what of it, I saved a step.

Olive Oil

Pepper

Crushed red pepper

Good Olive Oil for raw drizzle

Pizza Dough – seriously, if you buy this instead of making it, just go call Domino`s and go away.

What I did:

Preheat your oven to 550, let it heat for at least 35 min, an hour is better. Have a pizza stone sitting in the middle of the oven. Not the top, not the bottom, the middle rack.

Make the pizza dough, or take it out of the freezer and thaw it.

Chop all the toppings.

In a small saute pan, add some olive oil and the mushrooms, cook them with some black pepper and thyme if you wish. Don`t add salt or they will be too wet. You don`t want wet!!!

When Mushrooms are done, cook the sausage in the same pan. When cooked, set on a plate with paper towels to drain.

Stretch out your crust. Don`t roll it unless you like it to be dense. Take the ball and stretch it in the air by turning it in circles. Put it on a floured, preferably with semolina, parchment and continue to stretch by pulling it from underneath until it is as big as possible. If you rip a hole, no worries, just pull it back together and fill the hole.

Ready? Put the stretched dough, parchment and all on the pizza stone. Top it now, while on the stone in the oven. It will be hot.

Spread a thin layer of sauce. In this order, add the mushrooms, olives, onions, sausage on the husband`s half, then cheese. Close the oven and cook for 10 min. It should be done and crisp. Lift it with the peel to check, if not crisp on the bottom, give it 2 more min. Mines done.

Pull it out and cut it.

Sprinkle with oregano or basil or both – fresh. Drizzle with olive oil, I like Titone, and crushed red pepper.

Eat It.
