Jeez I worked a long day. But I still managed to do it. The husband grabbed some fresh dumplings from North but I was so late I decided to hold them for lunch tomorrow and make this. it took all of 15 min and I have some pesto made for a crap-ton of meals later.
Fresh pasta from the CSA, cherry tomatoes, some remnants of cambezola and boucheron, made a spinach pesto and salad. All in one.
What I used:
1 pint cherry tomatoes
1/2 oz boucheron or goat cheese
1 oz cambezola, or use 1/2 oz of triple creme cheese like a camembert or the like and 1/2 oz blue cheese or a combo of any cheese.
Half a box of mix greens or arugula or herb salad, like 2 oz or a couple cups
Crushed red pepper
5 oz washed baby spinach
Handful of basil
2 large garlic cloves
1 tablespoon parmigiano-reggiano
Some sprigs of fresh oregano if you have
Small handful of pine nuts, walnuts work too
Sea salt, pepper, crushed red pepper
About a tablespoon or 2 of olive oil. Use a good one. I like Titone.
12 oz of fresh pasta. I had a red pepper shell from the CSA.
What I did:
Quarter the cherry tomatoes. Add the cheese and sea salt and pepper and some crushed red pepper. Use an amount to taste on the spice. Stir and put a pot on to boil with salted water.
Make the pesto. Stick all the pesto ingredients in a food processor and whir it to submission. Or til combined. Whatevs floats your boat. you will now have enough for a while.
Add a tablespoon or so full to your bowl of tomatoes and cheese. Add the salad and mix.
Cook the pasta for 3-5 min or however long yours says. Drain and add to the bowl.
Mix it up and it will melt the cheese.
