Polenta with Yellow Squash, Broccoli Rabe and Roasted Tomatoes

This is another super simple. It takes 5 minutes to prep – 10 if you chop slow. Stick it in the oven and roast and you are done. I make a lot of polenta since it is super adaptable, speedy and gluten-free. Here is another version. Like always, I roasted the veg. With a Simple salad, you are good to go with a ton of veg.

What I Used:

1 Yellow Summer Squash, a zucchini would work as well.

1 pint Grape Tomatoes

1 Head Broccoli Rabe

8 Cloves Garlic, Peeled

Sea Salt, Pepper, Crushed Red Pepper, Smoked Hot Paprika

Olive Oil

1 Cup Polenta, I use the De Lo Estancia brand as it cooks in 5 min and is not processed or ~quick cooking~

3 Cups Veg Stock

Approx an ounce of cheese – I used a spanish blue cheese.

What I Did:

Quarter the tomatoes, slice the squash. Add to a foil lined pan with the garlic cloves. Add a drizzle of olive oil and season with salt, pepper, crushed red pepper, and smoked paprika.

Chop the ends of the broccoli rabe and slice the remaining head in half. Toss on top of the pan of veg – it will be really full, but it will wilt a ton. season with crushed red pepper, pepper, and a drizzle of olive oil.

Stick in a 350 degree oven for 25 minutes. Timer is up. Stir and stick back in for another 20-25 minutes. The broccoli rabe will be looking wilted and the leaves getting crispy – this is good and ok. You want to stir it though so that it stays wet and soaks up all the liquid from the tomatoes.

Timer is up. Stir again. Is the garlic soft? Good. Start the polenta. No? stick it back in for 10 minutes more. Mine is done so I started the polenta.

Bring the stock to a simmer and stir in the polenta, whisk for a couple minutes until thickened and cooked. 3 minutes works. Add the cheese and melt it.

Take out the roasted veg.

Plate It.

Eat It.
