Tomato-Avocado Sandwiches

this is the last of my sandwiches for the week and I had some really nice campari tomatoes and avocados and goat cheese and it`s all on a sandwich and all super easy.



What I Used:

Goat Cheese – I had a Spanish Cabra

Campari Tomatoes – they are currently good for being March



Alfalfa Sprouts

Dijon Mustard

Pesto or fresh Basil – I had the later on hand.

Ciabatta or Baguette

What I Did:

Slice the veg – I only needed to do the tomatoes and avocado because my cucumber was sliced for yesterday`s Banh Mi.


Warm the Bread in the oven, then slice and toast it in the oven for 7 minutes at 400 degrees.

Assemble the sandwiches. Spread the Mustard and/or pesto on each side. Then the cheese, you can melt it in the oven on the bread if you want. Then the veg.




That`s it.

Plate It.

Eat It.
