Roasted Wild Ramps and Asparagus with Salmon and Wasabi Edamame Rice

I suppose this could be 3 separate posts, but I am too lazy for that, and made it all together, so 1 post it is. Besides, these all go together well.

Ramps are in their brief season, so I grabbed some and decided to roast them. I still have another half bunch that I will possibly make a pesto with.

This is all an impossibly simple dinner to make and it could be grilled if you have the weather for it. I`m roasting mine. Salmon, just foil-wrapped and roasted. Asparagus, just peel the ends and roast it. The rice, just add some lime, wasabi, and edamame. That`s it.

Ramps are so the best thing ever so get some and try this.

Roasted Aparagus and Egg Sandwiches

I saw these asparagus -egg sandwiches on thekitchn.com a few weeks back and they seemed like a good idea, I`m too lazy to find the link, but this is my version. I thought of adding roasted mushrooms to the mix, but had just put the asparagus in the oven, so I skipped it. I`ll try it next time.

This is pretty fast and simple and would be a good use of leftover asparagus, but I usually don`t have leftover asparagus – it gets eaten as it is cooked. Peel the lower stalks on the asparagus, it makes a difference and who wants a stringy sandwich, then again, I don`t understand why people would ever want stringy asparagus, gross. I had some basil-spinach pesto in the fridge that I made the other day, it`s a good addition.

Roasted Cauliflower Mash + Roasted Asparagus and Shiitake Mushrooms + Poached Eggs

I am super sore from the gym having upped my working out-age to 5 days a week. Today was a 2.5 hour session. With that I am making something with less carb than I normally consume, not that I am giving up carbs anytime soon. Really I had 2 huge heads of cauliflower in the fridge and needed to make some room, so I decided to sub a cauliflower purée for polenta. I roasted some mushrooms and asparagus and topped with poached egg for some color and protein and voilà, another easy dinner. Oh and I didn`t do an On Deck because I was too busy at work.

Roasted Asparagus and Wild Mushrooms

Still flying solo with the husband away on biznass. Unfortunately, since he feeds the cats, I got up and was shocked to see an empty bowl this morning – I forgot to feed them! Luckily they did not starve to death, not that I would have really forgotten to feed them for long.

Anyhoo, I`m deviating from my posts of full meals for this, though you could certainly add a poached egg to the top and a salad and call it dinner. This is pretty simple and fast – only 5 minutes of prep and 30 in the oven and you are done.

Puy Lentils with Feta, Almonds and Roast Vegetables

I’m leaving the commentary to a minimum here and just saying make this. ZOMFG make this. Bonus is that it is healthy and other than the feta, complete detox food. Leave out the feta for dairy-free/vegan.  This is aces and going on rotation.

It is super versatile and could be stuffed in squash, portobello mushrooms, or along side a pork roast, if you eat the meat. I don’t, but just saying. I used this as a base and tweaked it to make it. I made it a bit more substantial and added some more flavors I like.

Creamy and Healthy Asparagus-Zucchini Pasta

I haven’t made this in a while and to be honest, I should have gone to the gym today but decided to be all futzy cooking instead.

This was one of the first Jamie Oliver recipes I tried and it is great because it has a ton of flavor but has very little fat. You can make the sauce ahead like on a weekend and put this together in a snap after work. I also should just rename this blog Cooking Jamie Oliver`s Stuff, or JO Fangirl.  It was not on my on deck, but I had the asparagus and zucchini on hand and here it is.

Vegetable Pasta Bake

I made it my mission today to clean out the fridge of all perishables prior to vacay. I made a new on deck and emailed it to myself with a new plan:

Things on hand:
1 bunch spinach + 3 mixed salads
1 bunch asparagus
Crimini + Shiitake mushrooms
2 pint containers grape tomatoes
2 yellow summer squash
Brussel sprouts

Monday: Mushrooms – use up – saute with the onions, garlic tomatoes,
spinach and squash – use up remainder 1/2 package of
pasta and bake with some parm and whatever cheese – manchego?
cambezola? until done. serve with a salad.

Tuesday – Roast the brussel sprouts along with the asparagus and half
the tomatoes + garlic. Roast all veg on Monday
Put the tomatoes/asparagus on polenta. Eat with a salad

Wednesday: Roast acorn squash and add the leftover tagine. Eat with a salad

Thursday: eat brussel spouts with leftover pad thai that I made Saturday and grilled cheese sandwiches (there is only enough pad thai for 1)

Friday: grilled cheese sandwiches for lunch.

Yes, I am aware this list and the combos are perhaps bizarre. But it will work.
